I've not got a problem with the MGS1 graphics :/ It doesn't look great when taken out of context, but considering what the guys were working with they did a pretty good job. If you want to see some really dated graphics, go back and play FFVII :P
IMO, the gameplay mechanics dated worse than the graphics. It's still good, but no first person aiming? Come on! And the back-and-forth walking sections? I appreciate the size of the disc they had to cram things on, but they could have just edited the first few zones out of disc two and made some more unique areas.

Pshh, the only good Final Fantasy Tactics was the original for the PS1. Impossible to follow storyline tho, but tons of replay value.
